Mexican Wedding Cakes

I made these delicious cookies for Carson's blessing. I love the way they taste and I think they look great! Plus they are SO easy to make.

Ingredients:

1 cup of butter or margarine (I use butter)
1/2 cup sifted confectioners sugar
1 tsp. vanilla
2 1/4 cups flour
1/4 tsp. salt
3/4 to 1 cup finely chopped nuts (I normally use walnuts)

Directions:

Mix butter, sugar and vanilla thoroughly. Measure flour by dipping method, and add salt. Blend the flour and salt mixture to dough mixture. Mix in nuts. Chill the dough for at least 10 minutes.

Heat oven to 400 F. Roll dough in 1 inch balls. Place onto ungreased cookie sheet. Bake 10-12 minutes or until set but NOT brown. While still warm roll in powdered sugar. Let cool. Roll in powdered sugar again.

I like to store the cookies in tub a ware a few days before serving.
